Copycat Nutrisystem Tuna Avocado Melt with Stuffed Tomato
I have not been eating as good as I’d like to lately. Summertime is the worst time for me for some reason. This past weekend I made hubby and I a lunch we used to enjoy often and thought I’d share with you.
This meal we usually have for lunch and we split it. For this post I placed everything on one plate. I usually divide the avocado when stuffed and also divide the tomato. So for lunch you get 1/2 of this recipe. It’s usually more than I can eat.
1 package Tuna Creations or you can use regular tuna. All the flavors I have tried with this is good. The buffalo flavored tuna are so good!
1 Avocado halved
One medium tomato cored with inside scooped out and reserved
1 slice Light American Cheese
1 Tablespoon light mayonnaise
Mix tuna with 1/2 avocado mashed, the scooped out part of the tomato, pickles and mayo.
Stuff the avocado with half of the mixture, stuff the tomato with the other half of the mixture.
Cover the avocado with cheese and place in the microwave on high for about 30 seconds or until cheese is melted.
For 1/2 this meal approximate calories are 225, carbs 10, protein 13
So easy and delicious!
